Vinification: grape harvest is handmade by the half of September. The fruits are brought to the cellar and softly pressed in order to get a clear and full of aromas must, which then gets transferred to temperature-controlled inox steel tanks, where the fermentation occurs. By the end of the process, the product is filtered and put into inox steel autoclave (pressurized tank) where the sparkling gets realized with the Martinotti or Charmat method
Maturation / Fining: exclusively in pressurized inox steel tanks
Characteristics of the wine: to the eye exam it shows to be crystal-like clear, of a pale yellow color and with a fine and persistent perlage. To the smell it is intense, fine and fairly complex, with notes of white flowers, white peach and lemon peel, as well as mineral scents. To the tasting, it is dry, fairly warm and soft, fresh and sapid. Overall intense, with an undemanding structure and a good flavor persistence
Food matching: excellent as an aperitif, with light fried food or fresh vegetable soup
Serving temperature: 6-8 °C.
