We wanted to give new value to the ancient "Whole Bunch" winemaking technique, the traditional method of making wine before the destemmers took over in the 1980s.
A return to the origins, an unconventional process that makes the most of what nature is able to offer, creating a wine rich in aromas and flavors that best express our land, the Abruzzo region.
Hand picking and selection of the best Montepulciano grapes in the vineyard
Fermentation and maceration in stainless steel tanks with the inclusion of about 30% whole bunches with gentle pumping over and délestage, with a temperature around 26-28°C.
Retention on lees and maturation in stainless steel for about 18 months before bottling
